Description
A variety of unleavened Indian flatbread traditionally cooked only on one side a tava, and then cooked on the other side by exposing to the direct heat (similar to naan in a tandoor). The phulka puffs up when cooked due to the accumulation of steam. Phulka are intended to be served immediately after cooking, before the steam is released. Phulka is typically thinner and flatter than chapati, which helps it puff up when cooked.
